Britain's most famous cheese - Stilton - "The King of English Cheeses" is a vegetarian, blue cheese. Its pedigree goes back some 300 years and whilst historically many have claimed some ownership, no one person can be identified as the originator of the recipe.

Stilton blue cheese is a semi hard, blue vein cheese with a rich mellow and a piquant aftertaste. It has narrow, blue-green veins and a wrinkled rind which is not edible. It takes 136 pints of milk (78 litres) to make one 17 lb (8kg) Stilton cheese. It is milder than Roquefort or Gorgonzola.

Stilton is a very special cheese and its delicious taste has been refined and developed over the centuries. It is unusual in that it has a protected status and name. To be called "Blue Stilton", a cheese must:
  • Be produced only in the three counties of Derbyshire, Leicestershire and Nottingham in England.
  • Be made of local, pasteurised milk.
  • Be made in a traditional cylindrical shape.
  • Be unpressed and allowed to form its own crust.
  • Have delicate blue veins radiating from the centre.

    There are only 6 dairies worldwide licensed to produce Blue Stilton Cheese. Between them they have won innumerable awards, too many to list here.
