What is the History of Cheese?

The history of cheese, including vegetarian blue cheese, together with many early foods is uncertain. It has been suggested that the first cheese was probably experienced as a pleasant surprise to travelling nomads in pre-historic times. The dried and prepared stomach of a young calf was a convenient container used by travellers to carry water, wine and other fluids. The stomach of young mammals contains a complex of enzymes called rennet which helps to digest their mother's milk. It is possible that milk carried this way coagulated into an early form of cheese.

Is Animal Rennet Used To Produce Cheese?

Rennet is a key ingredient in the production of cheese, however due to both practical reasons such as the limited availability of a plentiful supply of calves' stomachs, and the issues of animal rights, cheese makers have explored other ways to coagulate milk. Many sources of enzymes are now available that serve as excellent substitutes for animal rennet. These are also less expensive than animal rennet and most blue vegetarian cheese makers use vegetable rennet these days.
