Dolcelatte is a vegetarian, blue veined soft Italian cheese. It provided a gentler alternative to the traditional strong tasting Italian blue cheese, Gorgonzola in 1960. Now, over 50 years on, it is still the preferred Italian blue cheese brand in Britain.The name Dolcelatte itself is translated to 'sweet milk' in English. The production method is similar to the one used for making Gorgonzola, but the fat content is higher and it is matured for half the time. It is also slightly less salty. The distinct smooth and creamy texture of the blue cheese makes it melt in the mouth like ice cream. It is a versatile cheese, equally tasty on its own or can be added to variety of dishes such as pasta, pizza or risotto.
